Question about choosing a company to drive for?

So, I'm looking to get out of the oil field and more on the open road.  I live in Casper, WY and the prospects here seem limited.  I have had several callbacks, but most of the companies don't have what I'm looking for - anywhere from 3 weeks to 10 months out.  Went to a local job fair yesterday and the few driving jobs were oil field.  Been doing that the last 10 years and after my last job I am done with 24/7 on-call!!  My preference would be to be out no more than 2 weeks and home for a day or 2.

Currently talking to 2 companies - Interstate Distributors and Knight Transportation.  Interstate could get me regional runs out 21-24 home 2 (just talked to recruiter and due to changes within the company I am no longer in their hiring area so Interstate is out).  Knight offered 7-10 out home 2 running NE/IA/SD/WY.  Pay rate is .40 cpm plus $30/stop with 1-3 stops.  It's hauling aluminum products.  Told me I would go to orientation Monday and be in the truck Wednesday or Thursday with driver trainer for 1-2 weeks (mainly to familiarize with Elogs, Prepass,etc.).

I know recruiters often tell you what you want to hear just to get you there, so any help right now would be greatly appreciated.  The Knight position sounds like what I'm looking for, but is it too perfect?  Does anyone here know anything about the company.  Any info/suggestions would be helpful!

There is a 3rd option hauling frac sand for the oil field.  It's what I've been wanting to get away from for a long time, but I would be home every night.  It pays 20% of load then 25% after 30 days.  Unfortunately, I've been paid by the load before and had to work my ass off to just barely make a living.

Biggest things I'm looking for is a decent pay rate, health insurance and days off (vacation would be nice but I can work it out if none is offered.  My last job paid awesome, but I had to find my own insurance (health coverage in Wyoming that qualifies is expensive and the deductibles are high) and my only time off was a day when my phone didn't ring.  Right before I left I was out 2 weeks straight with 2 periods of over 48 hours when I got a cumulative 5-7 hours of sleep.
